Who doesn’t like, the basic recipe is made with just semolina, sugar or honey, ghee, and sometimes milk. Variations of this can add dried or fresh fruits, nuts, shredded coconut, and other toppings. This is one of those dishes, that is made across India, in all regions, and has so many variations, but they all taste good and are liked by all ages
This Suji Halwa has been made with ghee (Clarified butter) and sugar following the traditional way. I like the Suji well roasted, thus I have made it similarly, it alters the taste much if it is roasted less. Vegans can go for olive oil instead of ghee, it tastes amazing as well.
Step 1 – In the pan add ghee , let it dissolve & then add sooji.
Step 2 – Roast Sooji on medium flame, stirring occasionally and then continuously once pan is really hot to turn sooji golden brown.
Step 3 – Add Sugar and cardamom to this golden sooji and mix for 2 minutes on low flame.
Step 4 – Add water, stirring continuously on low to medium heat.
Step 5 – Stir till Sooji thickens.
Step 6 – In a small pan, add 1 tb spoon ghee and roast dry fruits til slightly golden.
Step 7 – Garnish Halwa with these dried fruits and serve.
