Strawberry Caprese Salad with mint.

This is a variation from the original Caprese salad, with the addition of fresh strawberries, mint & balsamic along with the regular, fresh basil leaves & mozzarella.

I have always loved a classic Caprese but have you tried the same with fresh strawberries? It tastes absolutely amazing, slightly tangy, and a bit of sweet with a dash of mint & lots of basil. 

You can skip mozzarella if you are a vegan & can add just the olive oil.

Can also add toasted nuts such as pecans, walnuts, sunflower seeds for that additional crunch if you like.

Ingredients
    Ingredients for the salad
  • 20 Fresh strawberries (Sliced)
  • 20 Cherry tomatoes (Sliced in 2)
  • 150 grams halved mini mozzarella balls
  • 1 ripe avocado, pitted and diced
  • 1/3 cup Toasted walnuts
  • 1/3 cup loosely packed basil, torn
  • 1/4 cup Fresh mint leaves
  • Ingredients for the Salad dressing
  • 2 teaspoons Ground black pepper
  • Salt (as per your taste)
  • 3 tablespoons Extra virgin olive oil
  • 1/4 cup Balsamic Vinegar
  • 3 tablespoons Honey
Instructions
    Instructions for the Salad dressing
    • In a small pan, bring the balsamic vinegar to a high simmer over medium heat. Stir, then reduce the heat to low in about 8 to 10 minutes. it should be thicker. Set aside to cool.
    • Once cooled add, salt, pepper, honey & extra virgin olive oil and stir well
  1. Instructions for the salad
    • In a serving dish/bowl, place the strawberries, cherry tomatoes, mozzarella, avocado, walnuts, basil & mint leaves. 
    • Drizzle the salad dressing and mix well, add more pepper & salt as per your taste.
