Description

This is an easy Strawberry salad recipe with the sweetness of fresh strawberries & balsamic vinegar, which pairs beautifully with fresh berries. Just one spoon will give you such a burst of flavor. This is an absolute favorite and is loved by all ages.

I have used Feta cheese, you can opt for Fresh mozzarella cubes.

Also instead of baby spinach, you can go for Arugula leaves or microgreens.

If you are a vegan, pls skip the feta and the taste remains wonderful.

As another variation. you can also add some nuts of your choice eg toasted walnuts, pecans, hazelnuts, etc to make it crunchier.

Preparing the dressing

    1. Add all the ingredients listed under "Preparing salad dressing" to a food processor and pulse until smooth.
    This dressing can be made ahead of time and stays good for 4-5 days.
  1. Instructions to Prepare the salad
    1. Place Baby spinach whole leaves on a serving platter.
    2. In a separate mixing bowl mix all the other ingredients listed under "Ingredients for the salad" and add 3 tablespoons of prepared salad dressing.
    3. Toss & mix the salad gently and pour it on the prepared baby spinach layer on the serving platter.
    4. Serve with additional dressing on the side.
    1. It is best to not add the dressing before hand if you are planning to serve the salad a little later, thus add the dressing shortly before serving. This will ensure the greens do not become soggy or wilt. 2. You can adjust the salt as per your taste but considering that feta cheese will release its salt to the mix as well, keeping it on the lower side will help settle the salad better.
