This is a summer favorite in our home. I hope you like this too. Since I have made this Mediterranean style, I have added, pomegranate arils, herbs, and good quality extra virgin olive oil.
Take a large bowl, add spinach, cucumber, bell pepper, mangoes, onion, pomegranate arils, mint & coriander leaves.
Add the seasoning, Salt, black pepper, and red chilli flakes. Toss gently.
Now Add the honey, fresh lime juice, and extra virgin olive oil. Toss gently so that the seasoning is coated well. Taste test, if it needs more salt or pepper and add according to your taste.
Transfer the salad to a large serving dish, sprinkle the roasted pumpkin seeds and a little more chili flakes, pepper and serve
