This is an easy to make coconut laddu recipe wherein I have used freshly grated coconut. I love freshly grated coconut for this laddu/ laddoo because once cooked the coconut milk solidifies a bit and gives a goey texture to the laddus.
I have used sweetened condensed milk thus additional sugar is not required.
This is a great Indian sweets for Diwali parties or any such festive occasion and really quick to put together.
Ingredients
For Fresh Coconut Ladoo With Condensed Milk
1.5cup Freshly grated coconut
1tbsp Ghee or clarified butter
1tsp Cardamom powder
200g Sweetened Condensed Milk
1/3cup Desiccated coconut (To roll the laddus)
Mixed chopped nuts such as pistachios or cashews
Instructions
Making Coconut Ladoo With Condensed Milk
1
Take a heavy bottom pan and put it on low flame
2
Add ghee and once melted , add freshly grated coconut
3
Stir and roast the coconut till some of the moisture is dried up, around 3-5 mins without letting the coconut get brown.
4
Once roasted, add the condensed milk and cardamom powder and give it a good mix.
5
Stir on low heat and once the mixture starts getting thick stir non stop till you see the mixture leaving the sides to gather in centre.
6
At this point, coconut milk fat would have thickened the mixture. Switch the heat off.
7
Pour the mixture to a flat surface platter to let it cool a bit, start making laddoos when the mixture is still warm.
8
Apply some ghee on your palm and make laddus.
9
Now roll the laddus in the desiccated coconut powder and garnish with nuts.
10
Coconut laddus are ready to be served. They stay good in refrigerator for 7 days.
