Easy donut recipe that is baked and not fried

Description

This baked donuts recipe is very easy to make and the end result is worthy of your effort.

Though nothing comes close in softness that fried donuts offer, this comes quite close, with its fluffiness , softness & moist texture. Makes for a perfect breakfast, snack, or brunch recipe.

There is no use of yeast and thus there is no additional wait time for the dough to rise, I have used baking soda and baking powder to help them rise and prevent them from being dense. 

This tastes like traditional baked donuts from a bakery or homemade donuts.

You can roll them instantly in butter brown sugar & cinnamon or powdered icing sugar glaze for a richer taste. 

For the Donuts
  • 280 grams All-purpose flour
  • 100 grams Granulated Sugar
  • teaspoons Baking powder
  • 1/2 teaspoon Powdered cinnamon
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Powdered Nutmeg
  • 360 milliliters Whole buttermilk
  • 1 Large/Big size egg
  • 2 tablespoons Butter melted (If using salted butter skip the salt from the ingredients list.)
  • 2 tablespoons Any neutral flavour Vegetable oil
  • 2 teaspoons Vanilla extract
  • For the Topping/ Glaze
  • 100 grams Granulated brown Sugar
  • 1 tablespoon Ground cinnamon
  • 180 grams Confectioner's/ icing sugar
  • 4-5 tablespoons Whole fat milk
  • 1/2 teaspoon Vanilla extract
Instructions
    For making the Donuts
  1. Preheat the microwave in convection mode to 210°.

  2. Oil the donut baking pan with butter and dust a little flour.
  3. In a large mixing bowl, whisk together the dry ingredients, flour, sugar, baking powder, cinnamon, salt, and nutmeg.
  4. In another bowl, whisk together all the wet ingredients, buttermilk, egg, butter, oil, and vanilla extract.
  5. Add the wet mixture to the flour mixture, whisking until fully combined and there are no lumps.
  6. Transfer the mixture to a piping bag.
    Pipe about ¼ cup of donut batter into each mould. don't overfill to avoid the dome shape of baked donuts.
  7. Bake until donuts are puffed and lightly golden, about 10 - 12 minutes. depends on the heat of your microwave.
  8. Immediately turn them onto a wire rack

    In a bowl, whisk sugar and cinnamon. Once the donuts are baked, let them cool for a minute, then immediately toss them in cinnamon sugar,if the sugar mixture is not sticking, brush lightly with melted butter then toss in the sugar mixture.
  11. Donuts with Sugar glaze

    When the donuts are cooled completely, in another small bowl, whisk together the confectioners/Icing sugar, milk, and vanilla extract.

    Dip the cooled donuts in glaze and return to the wire rack. add sprinkles while the glaze has not set, if desired. 

Note
  • To avoid the dense donuts, pls ensure you measure the flour correctly and none of the products have expired as in baking powder.
  • Do not overmix the batter to avoid dense texture.
  • Fill only 1/4th of the donut pan so that, there is space for the donut to rise.
  • Using room temperature ingredients gives the best result.
