For example, the pasta form Cavatelli is known by 28 different names depending upon the town and region.

Description

This pasta recipe is one of the quick ones, saves me. lot of time on busy evenings, is filling and flavoursome with loads of goodness of spinach & buttered mushrooms. I have used the regular durum wheat pasta, though I generally prefer whole wheat varieties. You can opt for whichever you like the most.

Instructions

  1. Steps for boiling the pasta

    • Boil 3 cups pasta for 7-8 mins (al dente) in 4-5 cups water along with some salt and 1/2 teaspoon of olive oil
    • Once boiled strain the pasta and do not throw the water away.

  2. Steps for making pasta

    • Take a non stick pan / kadhai.
    • Add 2-3 tablespoon of olive oil.
    • Once the oil heats up, add chopped garlic and sauté for 3 minutes on medium flame.
    • Now add onion and sauté for 3 minutes and then add sliced Mushrooms.
    • Once onion and mushrooms are golden add chopped spinach & sweet corn kernels.
    • Add salt and sauté on medium flame and cover with the lid.
    • Once spinach is slightly cooked add powdered black pepper, pasta seasoning and chilli flakes and cover with the lid again for 3-4 minutes on medium flame.
    • Once the spinach is cooked completely add chopped capsicum and sauté.
    • Now add the white sauce and mix it nicely.
    • Add pasta and some water (which we kept while straining).
    • You can add water depending on the consistency required, this recipe has 1 Cup of pasta water.
    • Stir the pasta till white sauce is coated nicely on it.
    • Add mozzarella cheese.
    • Turn off the gas. Add oregano and chilli flakes as per taste. Pasta is ready to be served.

  3. Steps for making white sauce

    • Take a small pan and add butter.
    • Once butter has melted, add white flour to it.
    • Mix it properly, till it is slightly pale in colour (not brown).
    • Add corn flour and mix it rigorously.
    • Add some crushed black pepper and salt to it.
    • Add milk and mix it properly
    • Now add cream and stir the mixture and immediately shut of the gas flame.
    • Add shredded cheese in the mixture and stir.
    • If the mixture becomes to sticky, pour 1-2 tablespoon of strained pasta water/ hot milk.
