This is a variation from the original Caprese salad, with the addition of fresh strawberries, mint & balsamic along with the regular, fresh basil leaves & mozzarella.

Description
I have always loved a classic Caprese but have you tried the same with fresh strawberries? It tastes absolutely amazing, slightly tangy, and a bit of sweet with a dash of mint & lots of basil.
You can skip mozzarella if you are a vegan & can add just the olive oil.
Can also add toasted nuts such as pecans, walnuts, sunflower seeds for that additional crunch if you like.

- In a small pan, bring the balsamic vinegar to a high simmer over medium heat. Stir, then reduce the heat to low in about 8 to 10 minutes. it should be thicker. Set aside to cool.

- Once cooled add, salt, pepper, honey & extra virgin olive oil and stir well
Instructions for the salad

- In a serving dish/bowl, place the strawberries, cherry tomatoes, mozzarella, avocado, walnuts, basil & mint leaves.

- Drizzle the salad dressing and mix well, add more pepper & salt as per your taste.
